We usually recognize foods by their taste and smell. From early childhood, a single bite is enough for our gustatory nerves to activate and for the brain to store each food’s unique flavour. Through these processes, the brain quickly identifies what we want to eat at any moment. This explains why I might crave udon on Monday and curry chicken rice on Tuesday, or why I prefer an egg in the morning and a cup of milk before bed.
